LATEST RESEARCH:
Barley starch syrup tested for allergenic potential.

Published in: British Journal of Nutrition 2009. Volume 101, Pages 165-168. Nermes et al.

The aim of this study was to determine if barley starch syrup causes allergic reactions in patients with allergies to wheat, barley, rye and oats. The study involved 15 children all of whom had confirmed allergies to the listed allergens. After exposure to the barley starch syrup none of the children showed signs of allergy. The authors stated that the study confirmed with a 98% confidence interval that 90% of the patients with verified allergies to cereals will not react with allergic symptoms to barley starch.

Of course more studies will need to be conducted with larger participant numbers to further confirm these findings. We encourage you to speak with your Dietitian and Allergy Specialist before trialling barley starch syrup or products containing this.


RECIPES:
Amaranth Pasta with Peas.

This recipe is gluten free, wheat free, nut free, egg free, dairy free, yeast free, sesame free and seafood free:

2TBSP olive oil
1-2 cloves garlic, crushed
1 cup frozen peas

2 rashes preservative free bacon, thinly sliced (optional)
1 pkt amaranth pasta variety (any gluten free pasta can be used)**

1.    Cook pasta according to the directions on the packet.
2.    Heat oil in a saucepan or deep fry pan, add garlic, fry until just brown
3.    Add bacon if using, fry for 1-2 minutes
4.    Add peas, lower heat and cover with lid. Cook until pasta is ready

5.   To serve, place pasta in a bowl. Stir in pea mixture. Serve immediately. Garnish with parmesan cheese if  desired.
